In the Honey method, the coffee cherries are hand-picked in the morning, immediately pulped, and partially dried before being laid out for final drying. The Natural method requires the hand-picked coffee cherries to be immediately laid out on beds and dried for 10 to 14 days. The process is very labor-intensive, and every single bean is a testament to the dedication and craftsmanship of these farming families.
